Ideas for setting up a vm network part physical, part nested

Hi All,
I want to set up a physical vmware vsphere 5 test network. With 2 x ESXi hosts so i can perform failover.
so i have 2 servers:
1= HP Proliant DL320G5p, 4GB RAM & Intel Xeon dual core processor,  server 2008 R2 Operating system, configured on my office network:  10.10.x.x ip network     (static ip address)
installed on this server is: - vmware vsphere5 client.
                                      - vmware workstation, running 2 virtual machines, both with ESXI Installed (2GB RAM Each)
                                        ( on 192.168.x.x network)
2: HP Proliant DL320G5p, 3GB RAM & Intel Xeon dual core processor, No O/S installed yet.
I am thinking that this server can be used as my SAN.
Would it be best to install the baremetal version of openfileron here to use this server as a SAN?
Or
What would i intstall on this server as a operating system to set ip address etc, and then use vsphere server to connect to it via ISCSI so i can use as VMFS File format?
Or is there a better way to setup a test environment with the 2 servers i have/
